El batán: a prehistoric stone mortar and pestle used in Peru, a living tradition in Andean cooking.

The batán consists of a flat stone where the ingredients are placed and a heavy, rounded grinding stone called maran which requires two hands to use.

Our house sauce is freshly ground at the start of every service in el batán de margarita.

We source our ingredients carefully; always in pursuit of better taste, win-win economic's , and sustainability for Pachamama.

We source the majority of our vegetables and greens from EcoHuella. Our coffee comes from Cafe Origenes. Our next-door neighbor sources fresh and sustainable alpaca from the Ocongate region of Ausangate. Our sourdough bread is made with love from the hands of Migas. This is just the beginning.
